Stay-at-home orders are not all bad. A break from the hectic pace we all knew can be rewarding. Hot summer days and nights are a good opportunity to mix up a batch of your favorite frozen cocktail, invite a few friends over (socially distanced, of course), put your feet up and chill!

The Perfect Tom Collins

8 ounces gin

6 oz. fresh lemon juice (from 3 to 4 large lemons)

4 oz. simple syrup (1:1 sugar and water)

5 to 6 cups cracked or crushed ice cubes

In an airtight container, combine the gin, lemon juice and simple syrup. Seal and refrigerate until thoroughly chilled, at least 4 hours or overnight.

Transfer the chilled mixture to the blender, add the ice and blend until smooth and slushy. Serve immediately.

This recipe makes 6 to 8 services so any extras can be stored in a covered container in the freezer for later.
